Paleo Banana Walnut Muffins

Paleo, grain-free, gluten-free. Contains nuts.

Sometimes you need a simple muffin recipe that freezes well and you can return to again and again. This is that recipe for me. It’s full of potassium from the bananas which helps regulate your nervous system. Healthy brain fats from the almonds, walnuts and butter help cement this easy one-bowl recipe into my star performers.

Makes 12 medium muffins.

INGREDIENTS:

4 x large ripe bananas, mashed

3/4 cup butter

1/4 cup honey

2 teaspoons vanilla essence

2 cups almond meal

4 eggs

1 teaspoon of baking powder

1 cup walnuts, roughly chopped

RECIPE:

Preheat oven to 170C.

In a bowl, mix together bananas. Place butter and honey in a saucepan and melt on the stove together. Pour over bananas and mix together. Add vanilla essence, almond meal and baking powder and mix well. Lastly fold in the chopped walnuts.

Grease a twelve cup muffin pan and pour mixture in. Bake for 12 minutes until the muffins are lightly golden and spring bake in the centre when touched. Let cool and enjoy.

Freezes well.
