I’ve got heaps of healthier holiday snacks for you and your kids. This gorgeous and easy Paleo Sultana Loaf tastes divine and is gluten, dairy and grain-free.

We ate this for breakfast (so good with a cuppa 🙂 and since then its been wrapped and carted to the skate park and on family bike rides as our morning treat.

We bent a lot of diet rules with all those end of year parties and wind-ups in December but I’m feeling an itch to get back in the kitchen and eat clean to start the new year.

Want to know what we are eating today? The kids are making hummus and crudites for lunch, I’ve got homemade watermelon, cucumber and mint icy-poles in the freezer for afternoon tea, and tonight it’s ten-minute honey and mustard baked chicken thighs for dinner with a bag of supermarket salad.

Paleo Sultana Loaf

  • 1/2 cup coconut flour
  • 1/4 cup chia seed
  • 6 free-range eggs
  • 1 teaspoon of baking powder
  • 1/2 cup coconut sugar or rapadura
  • 1/3 cup butter or coconut oil
  • 2/3 cup coconut milk
  • 1/2 cup sultanas


  • Preheat oven to 175C.
  • Line a loaf tin with baking paper.
  • Mix all ingredients in a large mixing bowl and pour into pan.
  • Bake for 30 minutes until skewer comes out clean.


Note: In hot weather it is best to keep the leftovers of this cake in the fridge.
